Susan Tirima is a veteran when it comes to Kenyan cuisine, that is why she opened Aunty Sue’s Kitchen. What started as cooking for her daughters’ and their friends, has become a successful catering business with family-style pick up and delivery meal options as well.
Tirima’s oldest daughter, Tatenda Manika explained that her mom constantly cooked for friends and family for their special events until her three daughters encouraged Tirima to turn her delicious home cooked meal into a business. That was last summer.
Flash forward to June 2020, Tirima is now cooking at Twisted Kitchen, a commercial kitchen space for chefs. Specializing in Kenyan cuisine, Tirima also incorporates Zimbabwean and South African dishes.
Tirima and Manika highlighted some of their amazing food dishes for Totally Boise, and let’s just say, it was some of the best food we have had yet in the Treasure Valley. Not only are there a variety of options available to order, but everything can be made to spice level and dietary needs such as vegetarian or vegan options.
Here’s a list of Totally Boise’s favorite dishes from Aunty Sue’s Kitchen:
Mandazi: Dough fried to delicious sweetness. Bread has never tasted so good.
Kachumbari: What makes this delicious topping is diced tomatoes, onions, cilantro among other seasonings. Manika explains you put this on anything and everything: Chapati bread, curry, everything; seriously, just do it, you won’t regret it.
Samosas: Made vegetarian or meat, both fried treats are made to spice levels upon request and have similar seasonings with hints of cilantro flavors.
Masala: There aren't enough words in this story to describe how delicious this dish was. Mix in the kachumbari to make it even more delicious.
Iced Tea: Kenyan black tea with ginger, lemon and honey. While eating, this was so refreshing. Although made iced at Aunty Sue’s Kitchen, you can also drink this tea hot.
