Ingredients

(Makes 1 large loaf or 2 smaller loaves)

  • 1 ¾ cups all-purpose flour
     

  • 1 teaspoon baking soda
     

  • 2 teaspoons pumpkin pie spice (or 1 tsp cinnamon, ½ tsp nutmeg, ½ tsp ginger)
     

  • ½ teaspoon salt
     

  • 1 ½ cups pumpkin puree (not pumpkin pie filling)
     

  • ½ cup vegetable oil (or melted coconut oil)
     

  • 1 cup granulated sugar
     

  • ½ cup brown sugar, packed
     

  • 2 large eggs
     

  • ¼ cup milk (dairy or non-dairy)
     

  • 1 teaspoon vanilla extract
     

 


Optional Add-Ins:

  • ½ cup chocolate chips
     

  • ½ cup chopped pecans or walnuts
     

  • A sprinkle of cinnamon sugar on top before baking
     

 


Instructions

  1. Preheat & Prep
    Preheat your oven to 350°F and grease a 9x5-inch loaf pan (or two smaller pans).
     

  2. Mix the Dry Ingredients
    In a medium bowl, whisk together flour, baking soda, pumpkin pie spice, and salt.
     

  3. Mix the Wet Ingredients
    In a large bowl, combine pumpkin puree, oil, both sugars, eggs, milk, and vanilla. Whisk until smooth.
     

  4. Combine
    Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Don’t overmix.
     

  5. Add Extras (optional)
    Fold in chocolate chips, nuts, or both for extra flavor and texture.
     

  6. Bake
    Pour the batter into your prepared pan(s). Bake for 55–65 minutes (40–45 for smaller pans), or until a toothpick inserted into the center comes out clean.
     

  7. Cool & Enjoy
    Let the bread cool in the pan for 10 minutes, then transfer to a wire rack. Slice, serve, and savor the taste of fall.
